Classic Lemon Cheesecake Recipe by Mark Naoum, ABC Radio, Tuesday 10 January 2006
DIFFICULTY Low
Ingredients: 250g sweet biscuit crumbs 125g melted butter 250g-packet cream cheese 400g condensed milk 2 teaspoons grated lemon rind 80 mls lemon juice 1 teaspoon gelatine powder 1 tablespoon water
Method: Combine biscuit crumbs and butter and press on bottom of tin.
Add rest of ingrediants except for gelatine and water, and beat until soft and smooth.
Dissolve gelatine in water and add to mixture.
Mix, refrigerate and eat.
The balance between the lemon and the sweetness of the condensed milk makes for a yummy taste experience.
