Chocolate Mousse Recipe by Mark Naoum, ABC Radio, Wednesday 11 January 2006
DIFFICULTY Low SERVES 8
Just when you thought mousse had retired, it's back for an encore.
Ingredients: 450g dark chocolate, in little pieces 25 ml brandy 5 egg whites 4 egg yolks 300ml whipped cream
Method: Place chocolate, brandy and 50ml of water in a heatproof bowl over a saucepan of hot water.
Place over low heat and warm until chocolate has melted (this can also be done in a microwave on gentle heat).
Leave to cool for 5 minutes.
In a small dry, clean bowl, beat egg whites until stiff peaks form.
Add egg yolks to chocolate mixture one at a time, beating thoroughly after each one.
Fold cream into chocolate mixture, then fold in the egg white - in two batches - using a metal spoon.
Pour chocolate mousse into serving bowls or glasses.
Refrigerate until set.
