Chicken in Plum Sauce Recipe from GMA with Bert Newton AS PREPARED BY ELIZABETH CHONG 5/10/04
INGREDIENTS: 500g chicken pieces, cut into bite-sizes Peanut oil 4 slices ginger 1 onion, sliced 3 stalks spring onion, cut into 5cm lengths 10 fresh mushrooms, sliced 1 tbsp oyster sauce 2 tbsp plum sauce 2 tbsp Chinese rice wine Salt and pepper to taste
1 tsp cornflour mixed in a little water
COOKING: Pre-heat wok, add two tablespoons oil, then sauté the ginger, onion and spring onion over moderate heat until fragrant. Add chicken pieces and stir-fry over moderate heat for 1-2 minutes until colour changes. Lower heat and stir in oyster and plum sauces, combining well. Add a little water to the perimeter of wok and cover contents with wok lid for about two minutes.
Remove lid, add mushrooms and simmer for approximately two minutes. Season to taste, add rice wine and slowly stir in the cornflour mixture until the sauce thickens.
Serve immediately.
