Cupcakes with Passionfruit Icing Recipe from GMA with Bert Newton BY GABRIEL GATE 8/4/05
Makes 35 to 40 small Cakes/ 20-25 standard Cakes
Kids love to help make - and eat - these little cakes. We usually top them with passionfruit icing and a sprinkling of hundreds and thousands.
Ingredients: About 40 patty pans An oven tray
200 g unsalted butter 1 tsp finely grated orange zest 1 tsp pure vanilla essence A pinch of salt 200 g caster sugar 3 eggs (61 g) 2 cups self-raising flour, sifted 1/4 cup milk 2 or 3 passionfruits 1 1/4 cups icing sugar About 1/4 cup hundreds and thousands
Method: Preheat oven to 200°C.
Beat butter, orange zest, vanilla essence, salt and castor sugar in a large bowl until creamy. Beat in eggs one at a time until well incorporated.
Add flour and milk a little at a time, alternating as you go until it is all used.
Place patty pans on an oven tray. Spoon a little mixture into each - they should be about half full.
Bake in the oven for 12 to 15 minutes. Reduce temperature if the cakes colour too quickly. Remove from oven and leave to cool.
Strain passionfruit to obtain their juice.
Place icing sugar in a bowl and add passionfruit juice gradually until the consistency is thickish. Using a small spatula, spread a little icing over each cake and sprinkle the top with hundreds and thousands.
