Walnut Crème 核桃糊 Recipe from Kitchen Notes on Fenying's radio program, Tuesday, March 13, 2007
Ingredients: A: 300g walnuts
B: 1000g water
C: (mixed well) 30g rice flour 粘米粉 120g water
D: 180 - 200g sugar
E: 100g thick coconut milk (or cow's milk)
Method: 1. Soak walnuts in hot water for a while. Remove the skin. 2. Bake walnuts at 180ºC for 10 mins until lightly browned. 3. Blend walnuts with 1000g water until fine. 4. Pour walnut crème into a pot, use median heat and bring to a boil. 5. Gradually mix in Ingredients C and continue to cook until thick (stirring constantly). 6. Add sugar and stir to dissolve. Remove from heat. Lastly add in coconut milk and mix well.
