Durian Ice-Cream 榴莲冰淇淋Recipe from Kitchen Notes on Fenying's radio program, Saturday, April 14, 2007Ingredients:A:300g durian flesh (blend to a paste using a blender) B:300g whipping cream (chill first if using UHT whipping cream) 150g evaporated milk (chill in the refrigerator overnight before using) ¼ tsp durian essence C: (Sieved)30g coffee creamer (e.g. Coffee-mate) 50g icing sugar Method:1. Place ingredient B and C in mixing bowl, blend evenly at low speed with ball shape whisker. Change to high speed and continue to whisk till creamy. 2. Add blended durian flesh (ingredient A) and mixed till well-combined. 3. Pour mixture into container and freeze in the freezer.

For Vanilla Ice-Cream:
1. Leave out the durian flesh. 2. Use vanilla essence instead of durian essence. 3. Increase icing sugar from 50g to 60g.

Hi all, Durian Ice Cream 的食谱,将榴莲泥去掉,那就是1个 basic ice cream 的 recipe 了,你要加入什么馅料都可以,但是馅料一定要磨成泥,同时香精也要随着不同的口味而改变,例如:Mango ice cream > mango essence, Durian ice cream > durian essence, Vanilla ice cream > vanilla oil。
还有要记得:当你把打好的ice cream放进冰格内冻结时,冰格内的温度一定要调到最冷的度数。无论你是用植物性或动物性鲜奶油都可以。 April 17, 2007 11:06:00 AM SGT
