Golden Cream Sponges (Ginger Fluff Sponge)
Ingredients: 3 eggs, at room temperature 3/4 cup sugar 3/4 cup Fielder's cornflour 1 teaspoon cream of tartar 1/2 teaspoon carb. soda 1 teaspoon ground ginger 1 teaspoon cocoa 1 teaspoon plain flour 1 dessertspoon golden syrup
Method: Separate the eggs. Stiffly beat the whites. Add the yolks, then the sugar, gradually beating until sugar dissolves. Add the syrup and beat well. Sift dry ingredients 3 times and fold lightly through mixture. Place in 2 8" sandwich tins and bake in moderate oven, temperature 350°F gas, or 425°F electric, from 15 to 20 minutes. When cold, fill with mock cream.
-------------------------------------------------- The above recipe is from a very old recipe booklet put out by Fielder's Cornflour. I've added some notes below for clarification. I believe the Fielder's cornflour is now sold under the White Wings brand???
Notes: In the recipe booklet, it said a glass cup is used for cup measurements, whatever that means? 3/4 cup Fielder's cornflour = 100g 3/4 cup sugar = 125g caster sugar 1 dessertspoon = 2 teaspoons carb. soda = bicarb. of soda = baking soda
