Basic Chilli Paste (Cili Boh)
Ingredients: 20g dried red chillies, soaked in hot water to soften, drained then seeded 4 fresh red chillies, halved and seeded A pinch of salt
Method: Process dried chillies and fresh chillies in an electric blender or food processor (you may need to add a little liquid or water). Alternately pound the chillies in a pestle and mortar. Add salt to the blended or pounded chillies and keep in an airtight container in the refrigerator. Use when needed.
