1, 2, 3, 4 Cake Serves 10+
This is a basic cake recipe. Flavour with whatever you have in your "closet": Vanilla essence, sultanas, lemon or orange rind, berries etc. A malibu cake can be made by adding coconut and rum. Heavy cake batters bake better in a bundt tin, as the hole in the middle allows the heat to penetrate the cake from all sides preventing a sunken middle of unbaked batter.
Ingredients: 1 cup (250g) butter, at room temperature 2 cups caster sugar 3 cups self raising flour 4 large (70g each) eggs
Method: Preheat oven to 160°C (140°C fan forced). Grease base and sides of a 22cm bundt tin.
Using an electric mixer, cream butter and sugar for 5 minutes or until pale and fluffy. Add eggs one at a time, beating well between each addition.
Fold through sifted flour. Spoon into prepared pan, smooth with a small spatula. Bake at 160°C (140°C fan forced) for 1 hour. Cover with foil if cake is browning too quickly. Cool slightly in tin before turning out onto a wire rack to cool completely.
