Wok Fried Prawns in Salt Recipe from The Cook and The Chef (ABC TV), Wednesday, 17 October 2007: Season 2 Episode 36
Ingredients: 800g rock salt 12 whole green tiger prawns Strips from 1 lemon/lime zest from 1 lime 3 tablespoons coriander seeds 6 whole chillies, dried or fresh
Method: Heat rock salt in a wok with everything except the prawns. Add prawns and keep tossing. The heat of the salt cooks the prawns.
Remove prawns when cooked through and nicely pink. Serve with squeeze fresh lemon or lime. The prawns can be a bit messy to peel but are worth it!
