Zucchini Slice Recipe by Connie Hancey, ABC Radio, Wednesday 21 November 2001
DIFFICULTY Low
Cooking method: Baking
Ingredients: Up to 425 grams Zucchini (unpeeled, coarsley grated) 1 large finely chopped onion 2 or 3 finely chopped rashers of bacon 1 cup grated cheddar cheese 1 cup self-raising flour 1/2 cup oil 5 eggs Salt Pepper
Method: Combine zucchini, onion, bacon, cheese, sifted flour, oil and lightly beaten eggs.
Season with salt and pepper.
Pour into a well-greased lamington tin (about 16x26 cm) then bake in a moderate oven for 30-40 minutes or until browned.
Note: in a fan forced oven, reduce cooking time to about 25 minutes.

A moderate oven is about 170-180°C. Alternately, in a fan forced oven, reduce oven temperature to 150-160°C and cook 30-40 minutes.
Oil may be omitted if you so desired.
Zucchini can be partly substituted with grated carrot, corn kernels, shallots, shredded beans, and leave out the bacon for a vegetarian version.
