Burnt Butter Biscuits Recipe from TODAY, 23 February, 2010
Julie Goodwin joins us on TODAY with some of grandma's delicious burnt butter biscuits.
Makes about 14 largish biscuits
Ingredients: 125 grams butter 1/2 cup sugar 1 egg 1 teaspoon vanilla essence 1 1/4 cup of self raising flour Sultanas (optional) Choc chips (optional)
Method: 1. Preheat oven to 180°C.
2. In a medium pot over moderate heat, melt the butter and boil until it goes golden brown. Transfer to a mixing bowl - this will help it to cool.
3. Add the sugar to the pot and stir to dissolve.
4. Add the egg and vanilla and mix well.
5. Add sifted flour and mix well. The dough should be fairly sticky, glossy and elastic.
6. At this point, sultanas can be added to the dough if desired. If the dough is too soft to handle, refrigerate for a few minutes until firmer.
7. Shape the dough into balls, around the size of a golf ball. Space well on a lined baking tray and press down with a fork. Press choc chips into the top if you like.
8. Bake for 10 minutes or until starting to brown. They will be soft when they are removed from the oven.
9. Leave them on the tray for a few minutes before transferring carefully to a wire rack to cool. Once cool they will harden up.
