Mixed Berry and White Chocolate Muffins Recipe from 9am with David & Kim (Channel Ten)

Ingredients: Serves 12 large muffins
2 cups plain flour 1½ tsp cinnamon 1 tbsp baking powder 1 cup caster sugar 2 eggs ¾ cups canola oil ¾ cups milk 1 cup frozen berries, any variety ½ cup white chocolate chips
Method: Preheat the oven to 190°C.
Grease and line a large 12 cup baking tray. The easiest method is to use paper muffin cups to line the baking tray.
Sift dry ingredients into a large bowl. Add the sugar and the white chocolate chips and mix. Stir through the frozen berries.
In a separate bowl mix the eggs, milk, oil and vanilla essence.
Add the wet ingredients to the dry ingredients and stir lightly but thoroughly. Don't be too rigorous as you will break down the berries.
Divide the mixture evenly between the cups – they should be approximately ¾ full.
Cook for approximately 20 minutes until they are a pale golden colour.
Dust with icing sugar and serve warm with fresh butter.
