Chocolate Mousse Recipe from GMA with Bert Newton AS PREPARED BY GABRIEL GATE 22/9/04
Serves 6
Ingredients: 150g semi-sweet dark chocolate 80g unsalted butter 2 egg yolks 1 tsp instant coffee powder A pinch of cream of tartar 3 egg whites 2 tbsp icing sugar Extra dark chocolate for garnish 1 or more strawberries
Method: Break the chocolate into pieces and melt in a bowl over a bain-marie or double saucepan. Whisk slowly until smooth then remove from heat.
Whisk butter into melted chocolate then whisk in the egg yolks and coffee, combining until smooth.
Add cream of tartar to the egg whites and beat with an electric beater. When the whites are fairly firm, add the icing sugar and continue beating until stiff peaks form.
Using a large metal spoon, gently incorporate a quarter of the egg whites into the chocolate preparation, and then carefully fold in the rest.
Gently spoon the mixture into a bowl and set in the refrigerator for several hours. Serve sprinkled with grated chocolate and a strawberry on top.
