Oh, for some home-cooked food

EATING out may save you a lot of hassle, but when it comes to wholesome and nutritious food, nothing beats even the most basic home-cooked meals. How often one hears of those who frequent coffee-shops, restaurants and fast food outlets longing for some decent home-cooked fare. So, if you're tired of eating out, why not try some of these relatively simple yet tasty dishes.
Prawns In Soya Sauce
Ingredients:
600g big prawns — trim neatly
1 tsp chopped young ginger
1 tsp chopped garlic
2 big onions — cut into rings
2 stalks spring onion — cut into 2cm lengths
1 stalk coriander — cut into 2cm lengths
For sauce:
3 tbsp Shao Hsing Hua Tiao wine
1 1/2 tbsp soya sauce
2 tbsp oyster sauce
1 1/2 tbsp sugar
1 tsp sesame oil
1/2 tbsp thick black soya sauce
Salt and pepper to taste
For thickening:
Mix:
1 tsp cornflour
2 tbsp water
Method:
SPRINKLE some tapioca flour over the prawns. Deep-fry the prawns in hot oil till they are semi-cooked. Dish out and put aside.
Heat 2 to 3 tbsp oil in wok. Saute ginger and garlic. Add wine. When it is fragrant put in sauce ingredients. Mix in prawns and the rest of the ingredients. Stir-fry well. Add thickening and stir well. Add a dash of sesame oil to glaze the prawns. Dish out and serve.
Nyonya Assam Curry Fish
Ingredients:
600 to 700g white pomfret — cleaned and cut into thick slices. Sprinkle a dash of salt and put aside.
Mix and strain:
50g assam jawa
400ml water
(A) Pound:
100g shallots
5 pips garlic
2 slices lengkuas
2 buah keras
(B):
2 stalks serai (lemon grass)
1 bunga kantan — cut into halves
4 stalks daun kesom
(C):
2 1/2 tbsp chilli boh
1 tsp turmeric powder
1 tsp Maggi belacan powder
For seasoning:
1/2 cube Maggi ikan bilis stock
1/2 cube Maggi chicken stock
1/2 tsp sugar
Method:
HEAT 4 tbsp oil. Saute (A) and (B) till fragrant. Add (C) and assam jawa juice. Simmer, then add seasoning and put in the fish. When fish is cooked, turn off the heat. Dish out, sprinkle with sliced bunga kantan and serve with steaming hot rice.
Dual Bean Soup
Ingredients:
40g black beans
40g black eyed beans
Soak in water for 2 to 3 hours or until beans puff up slightly.
2 chicken thighs — cut into big pieces
5 red dates
1 litre water
For seasoning:
Salt to taste
1 tsp Maggi chicken stock granules
Method:
PLACE all the ingredients, except seasoning, into a double boiler pot. Bring water to a boil and steam over simmering water for 1 to 2 hours or until both types of beans are tender. Add seasoning and serve hot.
