Chicken Chop 香煎鸡扒Recipe from Kitchen Notes on Fenying's radio program, Tuesday, April 10, 2007Ingredients:1 kg boneless chicken thighs Seasonings:10 shallots (minced) 3 tbsp ginger juice 1 tsp chilli powder 2 tbsp curry powder 1 tsp kunyit powder (黄姜粉 turmeric powder) ½ tsp pepper 1 tsp corn flour 5 serai (bruised) (香茅 lemongrass) 1 tbsp sugar 1½ tsp salt Method:1. Wash chicken thighs thoroughly, cut into big pieces, drain and put in a mixing bowl. 2. Add seasonings and mixed well thoroughly. 3. Cover mixing bowl with aluminium foil and leave in the fridge to marinate for approximately 4 hours. 4. Add a little oil in a skillet, fry chicken pieces with low flame on both sides till cooked.
