Really enjoying the UK professionals' masterchef at the moment. Although it is difficult to get to know the contestants due to the format, but I love the skills test set by Monica because she always demonstrates a mini masterclass for the viewers. I think I learn so much from just a few episodes than the last few years of watching Masterchef Australia. For example making a thin tuile of caramel, you have to blitz the caramel then sift it thinly and melt it again in the oven. I've probably seen it done before but the technique never registered in my mind until I saw her making it, and then the contestants not realizing of the double steps needed for a very thin caramel. Also seeing the contestants having to prepare woodcock from scratch, and in another episode preparing and cooking whelks and winkles which we never see in Australia, although I remember eating sea snails when I was very young in Malaysia.
