Grown Up Banana Split Recipe from The Cook and The Chef (ABC TV), Wednesday, 8 October 2008: Season 3 Episode 33
Ingredients: Serves 2
2 ripe lady finger bananas 1 tablespoon butter 2 tablespoons brandy 1/4 cup roasted macadamia nuts, chopped 200g vanilla ice cream 4 tablespoons crème fraiche
Chocolate Sauce: 120g good dark chocolate 160ml (1/2 cup) cream
Method: Heat cream, pour over chocolate in a bowl and leave for three minutes.
Peel the bananas and chop in half lengthways. Melt butter to nut brown and cook the bananas cut side down first, turning them over when they are golden brown. Add the brandy and then plate the bananas, topping with chocolate sauce, adding the ice-cream and top with nuts. To guild the lily add some crème fraîche on the side!
