Muffins 小松糕
Recipes from Kitchen Notes on Fenying's radio program, Thursday, November 16, 2006
Ingredients:
300g self-raising flour
250g caster sugar
135g eggs
105g milk
125g melted butter
¼ tsp. vanilla extract
Method:
1. Preheat oven to 220ºC.
2. Sift self-raising flour into a mixing bowl, add sugar, set aside.
3. Mix together eggs, milk, melted butter and vanilla, then add to flour mixture. Stir in one direction quickly until mixture is just combined (do not over mix).
4. Put paper cups into muffin tins, fill with muffin batter to 90% full.
5. Put into preheated oven and bake at 220ºC for 15-20 min.
Chocolate Muffins 巧克力小松糕
Ingredients:
285g plain flour
15g cocoa powder
10g double-acting baking powder
260g caster sugar
135g eggs
110g milk
125g melted butter
¼ tsp. vanilla extract
50g choc chips
Method:
1. Preheat oven to 220ºC.
2. Sift self-raising flour, cocoa and baking powder into a mixing bowl, add sugar, set aside.
3. Mix together eggs, milk, melted butter and vanilla, then add to flour mixture. Add choc chips. Stir in one direction quickly until mixture is just combined (do not over mix).
4. Put paper cups into muffin tins, fill with muffin batter to 90% full.
5. Put into preheated oven and bake at 220ºC for 15-20 min.
Walnut Muffins 核桃小松糕
Ingredients:
300g plain flour
10g double-acting baking powder
260g caster sugar
135g eggs
110g milk
125g melted butter
¼ tsp. vanilla extract
50g walnuts (rinsed, and roasted, chopped roughly)
Method:
1. Preheat oven to 220ºC.
2. Sift self-raising flour and baking powder into a mixing bowl, add sugar, set aside.
3. Mix together eggs, milk, melted butter and vanilla, then add to flour mixture. Add chopped walnuts. Stir in one direction quickly until mixture is just combined (do not over mix).
4. Put paper cups into muffin tins, fill with muffin batter to 90% full.
5. Put into preheated oven and bake at 220ºC for 15-20 min.
