Light Fruit Cake 轻果料蛋糕Recipe from Kitchen Notes on Fenying's radio program, Tuesday, December 12, 2006One 22cm square tin Ingredients:Group 1 >250g butter 210g brown sugar Group 2 >240g (4 pcs) eggs Group 3 (sifted together) >320g plain flour 5g baking powder 5g mixed spices Group 4 (mixed together) >130g milk 1 tsp Brandy ¼ tsp vanilla oil (or vanilla extract) Group 5 >350g sultanas 100g mixed peel Method:Pre-heat oven at 180°C. 1. Beat butter & brown sugar till light. 2. Add eggs one at a time, beating well after each addition. 3. Add in Group 3 ingredients and mix well with low speed. 4. Gradually add Group 4 ingredients and mix well. 5. Add Group 5 ingredients and mix well. 6. Pour into a grassed 22cm/9" baking tin. 7. Bake at 180°C for 50-60 min till cook. 8. Remove and leave to cool.
