Love Letter 鸡蛋卷 Recipe from Kitchen Notes on Fenying's radio program, Thursday, February 1, 2007
Ingredients: A: 3 eggs 190g sugar
B: 500g thick coconut milk (from 1 coconut)
C: 100g plain flour 80g rice flour 粘米粉 20g starch flour (tapioca flour)
Method: 1. Beat eggs and sugar till sugar dissolves. 2. Add coconut milk and mix well. 3. Add Ingredients C and mix well. Strain. 4. Pour a little batter into greased love letter mould (pre-heated), bake till golden brown. Roll up or fold up white hot.
