Malaysian Fish Curry Powder
Ingredients: 1.8 kg coriander seeds 450g fennel seeds 450g cumin seeds 450g black peppercorns 1 kg dried chillies, stems removed 200g dried turmeric 30g green cardamoms 30g star anise 20g cloves 20g cinnamon quills 30g fenugreek
Method: Toast coriander seeds in a dry pan for 3 to 4 minutes until aromatic. Do the same for fennel and cumin seeds but for only 1 to 2 minutes. Combine the toasted seeds with all other ingredients and grind into powder.
