Betty's Kitchen: Pork spare ribs with Coke By Betty Saw
Q: I HAVE tried quite a number of your recipes and they're delicious. Can I substitute Chinese cooking wine in a recipe with beer? Please give me a recipe for spare ribs using Coca-cola.
A: CHINESE rice wine, made from glutinous rice, yeast and spring water, has a rich mellow flavour. Beer, which is mainly brewed from barley or hops, malt, sugar and yeast, has a strong bitter flavour. Therefore, beer or even Western wine will not make an adequate substitute. A better choice would be a good quality dry sherry.
Here's a recipe for Pork Spare Ribs with Coke.
COCA-COLA SPARE RIBS
Ingredients: 600g pork spare ribs, cut into 8cm pieces 1 tsp salt 1 tsp pepper
5cm young ginger, sliced 15cm leek, chopped 1 white part of spring onion, chopped
150ml Coca-cola 2 1/2 tbsp light soya sauce 5cm ginger, sliced 1 tbsp brown sugar 1/2 tsp chilli powder
Method: Preheat oven to 200°C.
Season spare ribs with salt and pepper.
Bring a large saucepan of water to a boil, together with ginger, leek and spring onion. Put in spare ribs and simmer for five minutes. Remove and place on a wire rack. Bake in preheated oven for 40 minutes.
Meanwhile, cook the sauce. Place Coca-cola, soya sauce, ginger, brown sugar and chilli powder in a saucepan and bring to the boil. Boil until liquid is reduced to about three tablespoons.
As soon as the ribs are done, mix with the hot sauce until they are well-coated with it.
