Coriander Chicken 莞茜鸡Recipe from Kitchen Notes on Fenying's radio program, Sunday, December 3, 2006Ingredients:10 shallots (小葱头), chopped 10 Chinese mushrooms (香菇), soaked until soft, chopped 1 chicken about 1½ kg, cut into pieces 200g candied melon (糖冬瓜), chopped 50 - 100g coriander powder (莞茜粉) 1 tsp. ground pepper (胡椒粉) ½ tsp. salt (盐) 2 tbsp. sugar (糖) Method:1. Heat up oil, saute chopped shallots until fragrant. 2. Add in Chinese mushrooms, chicken meat, and stir-fly until aromatic. 3. Add in candied melon and mix well. 4. Add in coriander powder, pepper, salt, sugar, mix well. 5. Add just enough water to cover chicken pieces and bring to boil, lower heat, cover and simmer for 20 minutes, taste and adjust seasoning if necessary. During the simmering period, you need to stir occasionally, and add more water if the sauce becomes dry.
