Herbal Chicken Thighs 药材鸡腿Recipe from Kitchen Notes on Fenying's radio program, Wednesday, December 27, 2006Ingredients:8 chicken thighs 鸡腿 (or chicken marylands *) Marinade:2 tbsp ginger juice 姜汁 2 tbsp hua diao jiu 花雕酒 (shaoxing wine) 1 tbsp sesame oil 麻油 2 tbsp oyster sauce 蚝油 1 tbsp sugar 糖 ½ tsp ground pepper 胡椒粉 Herbal 药材:32 pcs dang gui 当归 (dried Angelica sinensis) 24 pcs chuan gong 川芎 (dried Ligusticum wallichii) 40 red dates 红枣 (jujube, Ziziphus jujuba) 8 tsp qi zi 枸杞子 (goji berries) Method:1. Mix chicken thighs with marinade, season for 4 hours. 2. For each chicken thigh: use 2 aluminium foils stack together, put in 4 pcs dang gui, 3 pcs chuan gong, 5 red dates, 1 tsp qi zi, add in 1 chicken thigh and wrap up the foils. 3. Steam with high heat for 30 mins. * a butcher's cut for a whole leg consisting of the thigh and drumstick.
