Peanut Cookies 花生饼干Recipe from Kitchen Notes on Fenying's radio program, Monday, January 1, 2007Ingredients:500g fried peanuts (炒香花生), grind finely 500g plain flour, sifted 400g fine sugar (castor sugar) 500g peanut oil 2 beaten eggs for glazing Method:1. Mix ground peanut, plain flour, fine sugar, in a big mixing bowl. 2. Slowly mix in peanut oil till it forms into a soft dough (may or may not need all the oil). 3. Form into small balls, place onto a greased baking sheet, and glaze with beaten eggs. 4. Bake in a pre-heated oven at 180°C for about 25 mins till golden. Remove, leave to cool before storing.
