Malaysian Meat Curry Powder
Ingredients: 1.8 kg coriander seeds 450g fennel seeds 300g cumin seeds 225g white peppercorns 75g black peppercorns 675g dried chillies, stems removed 225g dried turmeric 40g green cardamoms 20g star anise 15g cloves 30g cinnamon quills 10 whole nutmegs
Method: Toast coriander seeds in a dry pan for 3 to 4 minutes until aromatic. Do the same for fennel and cumin seeds but for only 1 to 2 minutes. Combine the toasted seeds with all other ingredients and grind into powder.
